Process #4

The diagram illustrates how many steps are involved in cheese production.

Looking from an overall perspective, it is readily apparent that the process of manufacturing cheese consists of a total of ten steps, which are categorized into three main stages. These include coagulation, processing in factories and lastly aging.

The process commences when raw milk is processed in either one of two ways. In most cheese production, raw milk is pasteurized, then standardized and filtered, while these steps can be completely skipped in the conventional means of making cheese. The raw milk thereafter reaches a tank, where it is inoculated with fermented microorganisms, and mixed together with rennet to create curds and whey. This mixture is subsequently cut, stirred and cooked.

In the next stage, whey is separated from the mixture and drained, leaving only curds behind to be milled and seasoned by salt on a conveyor belt. The composition is subsequently poured into molds to be pressed and placed on shelves until each piece reaches maturity, while additional whey is drained. After the cheese aging process is completed, the now-ripened cheese is ready for distribution and consumption.
