Process #6

The diagram delineates how Pu-erh raw and ripe tea are created.

Looking from an overall perspective, it is readily apparent that the process of producing two types of Pu-erh tea is divided into a total of three main stages. These include heating and drying, followed by fermentation for ripe tea and aging during storage for raw tea and lastly compression as an extra step for ripened tea.

The process for both varieties of tea commences when tea leaves are plucked and fried to inactivate enzymes. The leaves are then rolled and dried under the sun to create loose raw tea. Thereafter, each variety of tea will undergo different treatments.

Concerning ripe tea, the leaves are placed into molds to be fermented and finally compressed into the end product. For raw tea, the leaves are initially compressed and stored until they reach maturity, which is when the tea is available for consumption.
