Process of making soft cheese

The diagram illustrates the steps involved in the production of soft cheese

Looking from an overall perspective, it is readily apparent that soft cheese is made through three main stages. These include mixing and cooking, fermentation and evaporation, and culminating in cooling.

The process begins when water and milk are combined together by a whisk and then this mixture is cooked at 5 degrees Celsius for two hours. After salt is added into the mixture, it is left to ferment for two hours at 35 degrees Celsius. Once the fermentation process ends, the now thicker mixture undergoes evaporation while steam exits through a pipe. The mixture stays there for a total of 8 hours and is heated at boiling temperature.

In the final stage, the highly dense liquid is once again cooled at 5 degrees Celsius, but this time for 6 hours, during which, waste water is filtered through one end and soft cheese the other.
